Healthy Oatmeal Raisin Breakfast Cookies

I’m always on the hunt for a breakfast I can make ahead and then grab as I’m walking out the door towards my morning adventure, whatever it may be. I’ve been tweaking my favorite Oatmeal Raisin Cookie recipe into becoming an ultra healthy, sugar-free, dairy-free, oil-free treat. And they still taste great! Check these babies out.

Ingredients: 

1/2 cup applesauce

2 mashed bananas

1 egg

1 teaspoon vanilla

1 1/2 cups all-purpose flour

1 teaspoon Cinnamon

1 teaspoon Nutmeg

1 teaspoon baking soda

1/4 teaspoon salt

3 cups quaker oats

3/4 cup raisins

1/2 cup chopped walnuts

 

Preheat oven to 375 degrees and mash together the bananas and applesauce in a big bowl. Add in the egg and vanilla; stir until combined.

Mix together the flour, cinnamon, nutmeg, baking soda, salt, adding the combination of dry ingredients into the big bowl of wet ingredients.

Once the dry and wet are combined to form a batter, add in the oats, raisins, and walnuts. Because this recipe is slightly different that your average cookie (no butter or oil) the cookies balls won’t reshape themselves as they bake. How you arrange them on the pan is how your final product will turn out, they won’t melt down.

Lightly coat a baking sheet with the cooking spray of your choice and arrange cookies, flattening down as desired. Bake at 375 degrees for about 20-25 mins or until they start to smell done and delicious.
