Oatmeal Raisin Cookies

These delicious oatmeal raisin cookies are a healthier version of the traditional favorite. The heartiness of the oats and the sweetness of the raisins make this the perfect cookie for colder winter days.


INGREDIENTS:

2 cup coconut oil melted
1/2 coconut sugar
1/2 cup maple syrup
2 large eggs
1 tablespoon pure vanilla extract
1 cup unbleached all-purpose flour
1 cup oat flour
1 1/2 teaspoons kosher salt
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
2 cups old-fashioned rolled oats
2 cups raisins
1 cup walnuts

METHOD:

Preheat oven to 350 degrees.

Combine melted coconut oil, coconut sugar, cup maple syrup, eggs, and vanilla extract, beating with whisk until creamy.

Add combined all-purpose flour, oat flour, salt, cinnamon, baking soda, and baking powder to the sugar mixture and stir.

Add rolled oats, raisins, and walnuts to batter, stirring until combined. Bake for 15 minutes and enjoy!
